Easy & Delicious Chocolate Eclair In A Pan

 I have been making Chocolate Eclair In A Pan for years and before that another relative made it until she passed away. There were a couple of holidays between her passing and me getting the recipe, but eventually I did. After reading the recipe I realized why she made it every year. Besides being delicious, it was so simple to make AND it needs to be made in advance. This would be a perfect Easter dinner dessert. Plus, its fairly inexpensive if you go generic with the ingredients. And kids can help. I could keep going, but I won't. So without further ado, here is Chocolate Eclair In A Pan.
Ingredients for Layers    
1 Box Of Graham Crackers
2 (3 oz) Boxes Instant Vanilla Pudding
3 Cups Milk
1 (8 oz) Container of Cool Whip 
  1. Mix milk and pudding until pudding thickens. 
  2. Add Cool Whip to pudding and mix. 
  3. Place whole graham crackers on bottom of 13x9 in pan.
  4. Cover with half pudding, graham crackers, remaining pudding and a final layer of graham crackers.
  5. Making topping recipe below. Pour over top graham cracker layer and spread to cover. Place in refrigerator for 12 hours. 

Ingredients for Topping 
1/4 Cup Milk
1 Stick of Butter
1 tsp. Vanilla
1 Cup of Sugar
1/3 Cup of Cocoa
  1.  Mix sugar and cocoa in sauce pan. 
  2. Add milk, butter and vanilla. Slowly bring to a boil while stirring continuously. 
  3. Once it boils for about 1 minute, remove from heat and continue stirring for about 2 minutes after bubbling stops . Watch for it to begin to thicken, then pour over graham cracker layer. If you wait too long, it's hard to get it to cover the pan. I would say it's safe to pour too soon than later. 

Some recipes say to use melted frosting from a can. Don't. Trust me, I tried. This chocolate topping is a deal breaker. Ya got to have it. The chocolate layer will get firm in the fridge and the graham cracker layer gets soft. So it needs to be in the fridge several hours. It's simple and delicious. Go try it.
