Lower Carb Cole Slaw

One of the reasons I find it impossible to stick to a low-carb diet is that I miss side some of my favorite side dishes (and pasta, bread, soda, etc.). So, I went online and started trying to find something easy that I could make and keep in the fridge. After googling recipes I came up with this lower-carb recipe:

 Lower Carb Cole Slaw
 (makes approximately 5 1/4 cups)
  • 1 C. Mayo
  • 2 T. Truvia
  • 1/4 C. Coconut milk
  • 1/4 C. Vinegar
  • 1/2 tsp. salt
  • 1 pinch of pepper
  • 16 oz. Tri-color Cole Slaw Mix (some bags are 14 oz.--that works fine too) 
  •  Mix first 6 ingredients. Add vegetable mix.  Refrigerate 2 hours. 
  • Optional: Add a little regular milk or coconut milk if you want it creamier. 

The Damage:  
Serving size : 3/4 C.
Calories:  178
Fat: 27
Carbs: 6.3
Fiber: 1.6

I know a lot of people count "net carbs", so.... 6.3 (carbs) - 1.6 (fiber) - 1 (Erythritol) = 3 net carbs

  1. I'll sometimes make it even healthier by replacing some/most of the mayo with yogurt. I love that they have broccoli slaw nowadays too. I think I might like that even better than the traditional cabbage slow. Just FYI, tried getting here via the Tasty Tuesdays post on Anyonita Nibbles, but the link didn't work.     1. I don't know why I didn't think of broccoli slaw! Broccoli is my favorite vegetable. I'm not sure how yogurt would do for low carb, but it would definitely change the fat. Thanks for the suggestions!
