Pumpkin Cookie Recipe


 A couple of years ago I got a handed down Pumpkin Cookie recipe. I just made these delicious, bread-like cookies last week and plan to make another batch this week.  I am going to share a pic of my daughter a few years ago when we made these cookies together







Pumpkin Cookies

Preheat Oven: 350 degrees
  • 2 1/2 C. flour
  • 1 tsp. baking powder
  • 1 tsp. baking soda
  • 2 tsp. ground cinnamon
  • 1/2 tsp. nutmeg
  • 1/2 tsp. cloves
  • 1/2 tsp. salt
  • 1/2 C. butter, softened
  • 1 1/2 C. white sugar
  • 1 C. pumpkin puree (not pumpkin pie)
  • 1 egg
  • 1 1/2 tsp. vanilla extract

Glaze

4 T. Milk (estimate)
2 C. Confectioners Sugar
1 T. melted butter
1 tsp. vanilla
Cinnamon (optional: to sprinkle on top)


1.  Mix together flour, baking powder, baking soda, cinnamon, nutmeg, cloves and salt. Set this aside.
2. In a large bowl, mix together softened butter and sugar. Add pumpkin, egg, and vanilla. 
3. Add dry ingredients to pumpkin mixture. 
4.  Drop by tablespoons onto cookie sheet.
(Tips : I used parchment paper. Easy to clean up. Use a spoon to try to make round and flatten slightly. Don't spend too much time on this though. You can't actually shape them.)
5. Bake 15-20 minutes.  Take off cookie sheet and place on cooling rack.

Make glaze:  Mix sugar, butter and sugar. Slowly add milk until it is a consistency drizzle (You might not need all 4 tablespoons. I am estimating what I have used). Dip the tops of cookies in glaze or drizzle glaze on top. If desired, sprinkle cinnamon on top. Enjoy!
